Oh boy. I am in love with this green salsa. I got it at Costco and we are putting it on everything. I used it with my Mexican Rice Bowls which my kidlets LOVE. And then I used it to make a yummy soup on a rainy day.
THIS SOUP IS EASY and HEALTHY. My favorite soup is always any kind of chicken tortilla soup. I’m always trying new recipes for it. This Green Salsa Soup is very similar to chicken tortilla and you could possibly even call it that. Using green salsa adds a kick and yummy veggie flavor. You can use store-bought OR homemade. Green salsa is fairly simple. Here’s a salsa recipe that I’ve used from Food Network.
Now for my recipe. Get out your Crock Pot. Here’s the EASY and HEALTHY recipe:
Green Salsa Soup
1 lb frozen chicken tenderloins
2-3 cups of green salsa (or more as needed to suit your taste)
1 can diced tomatoes (or fresh tomatoes)
2 cups black beans (canned or dry ones that have already been soaked)
1 red bell pepper, diced
1-2 cloves of garlic, minced
salt and pepper
1 cup water or chicken broth, if desired.
Directions:
Put frozen chicken in the slow cooker. Cover it with green salsa. Add all the other ingredients. Let it cook and simmer all day (at least 4-6 hours). When the chicken is tender and cooked, shred it or chunk it with 2 forks. Let it simmer some more. Depending on how soupy you want it, you can add 1 cup of water or even some chicken broth to make it go farther. Garnish with cilantro, or chips, or sour cream.
