Doritos Taco Salad

Doritos Taco Salad in a FLASH!  By Amy Jensen (P&P recipe contributor)



*This is a TOTAL kid favorite at our house.  Our six year-old comedian chose this for her birthday dinner this year….how easy is that?!  It’s a super fast, delish spring and summer dinner!  I often serve it with beans and rice to add substance and fill the hungry athletes!  Enjoy!  Love,  Amy J.  Your team players!! EASY!


 DORITOS TACO SALAD
1 can red kidney beans, drained
1 can corn, drained
1 can olives, drained, sliced
1 cup shredded cheese
1-2 tomatoes, chopped
2 heads leaf lettuce, chopped

1 large bag Doritos, crushed




TACO DRESSING
2 Tble mayonnaise
milk, as desired
  
*Stir mayonnaise with taco seasoning and add enough milk to make desired consistency. 

*Toss kidney beans, corn, olives, cheese, and tomatoes with lettuce.  Toss with desired amount of dressing.  Toss with crushed Doritos and SERVE IMMEDIATELY!  ENJOY!

NOTE: I often ADD chopped, grilled garlic chicken, cilantro, and avocado to fancy it up….CRAZY GOOD!

*Add enough milk to make desired consistency. 

*Toss salad with desired amount of dressing.




Toss with crushed Doritos.





SERVE IMMEDIATELY!  ENJOY!

  1. I've been wanting to try something like this ever since I saw a taco salad in a bag (basically you just buy fun-size bags of Doritos, crush them up, and add the taco stuff right to the bag) for a self-contained meal to eat while camping. Thanks for the reminder! It's almost camping season.
